We cook in a custom 800°F Italian mosaic wood-fired oven — the same tradition that has defined true Neapolitan pizza in Naples, Italy, for over two centuries.
Our dough cold-ferments for 48 hours. We use San Marzano DOP tomatoes, fior di latte mozzarella, and fresh basil. Every pizza is hand-stretched and cooked in 90 seconds. No shortcuts. No compromises.
The Craft
Our oven is not a prop. It is a custom Italian mosaic dome — hand-crafted and imported to replicate the exact thermal and acoustic conditions of a traditional Neapolitan forno. When it reaches 800°F, the floor radiates from below and the dome reflects from above. A pizza cooks in 90 seconds with a texture no conventional oven can produce.
The crust — the cornicione — rises in the heat with an irregular, open crumb and light char that is the hallmark of a genuine Neapolitan pizza. Every element is intentional. The leopard spotting on the base is not a flaw. It is proof.
Our dough begins two days before your order. Cold-fermented with a slow-rise culture, it develops complexity and digestibility that a same-day dough simply cannot match. Slow fermentation is not a trend for us — it is the only way we know how to do it.
